Hi there and welcome to my Healthy Living Corner! Let me cut to the chase, I will not tell you to not eat this or that, or demand that you eat like a rabbit. While we all know that eating your vegetables is paramount, I want you to enjoy preparing and eating them!
So, let’s roll up our sleeves and get started! One of my favorite ways to incorporate more green into your diet is Pesto!! Kudos to this quick and easy way of transforming basil, parsley, cilantro, spinach, arugula, kale… the sky is the limit!! A delicious way of dressing up your weeknight dinner, be it pasta, roast chicken, steak, fish, or even the humble potato!!
Start with the basics:
Two or three handfuls of fresh greens, or a combination
2 cloves fresh garlic, pressed
Juice of half or whole lemon (to taste)
2 tablespoons pine nuts (optional, but if you’re not allergic, they give a wonderfully rich dimension) or walnuts
Generous pinch of sal de maras or good sea salt
Good quality extra-virgin olive oil (about 1/3 cup)
Bit of warm water
Grated Parmigiano Reggiano or nutritional yeast
Throw everything except oil into your blender or food processor. Pulse a few times to blend. Open cap in lid and carefully add oil in a slow, steady stream until you see the pesto getting creamy. Taste for salt and lemon and add, if desired. If your pesto is a bit to thick, add warm water, not more oil. There you have it! You can make extra to season a most interesting pasta salad, drizzle some over your morning eggs, marinate tofu overnight… It keeps in a jar in the refrigerator for about 5 days, or you can make cubes of it in an icecube tray and freeze.
